Sitio Sao Jose is a small farm located at Mantiqueira, Minas Gerais. The property belonged to Rafael’s grandfather and passed on to his father. Rafael is a young farmer who has been helping his father for the past 10 years.
This microlot went through a washing machine to remove any defects. It was then put on raised beds for 5 days and being stirred 8 times a day to avoid fermentation. Coffee was then placed in a static box for 12 hours at cold temperatures and changed to 40 degrees for 12 hours. Finally, it was placed in the rotary dryer for 8 hours at 60 degrees. It rested for 2 days before receiving the final processing. Rafael explains the secret of truly special coffee is to process in the right time, without rush.
This coffee is a part of the ‘Young Farmers Project’.
