Background: The high end of Guatamala’s specialty coffee market is populated by wonderfully clean and balanced coffees, meticulously processed and with pedigrees in traceability. The Finca El Angel is such a coffee, that stands out not only for its immediately apparent green bean quality but for the elegant and refined notes of juicy apple, and a pronounced but not overpowering dark chocolate. Crisp apple acidity complements a smooth body with dark cocoa rising in the finish.
This lot was grown in rich volcanic soil at high altitude – slow to mature under these conditions, the plants have produced exceptionally dense, flavour-rich beans. After picking, the coffee is wet processed with spring water and then dried in the sun. Before export, the green beans are hand sorted for defects to ensure a clean and uniform cup – great for roasting as well as brewing.
Delicious as espresso, this Guatemalan is also a highly recommended filter coffee: sweet, delicate and aromatic.
