In the south-central area of Costa Rica is located the Zona de los Santos, an area that comprises the coffee growing regions of Tarrazu, Dota and Leon Cortes Castro. Dota, which capital is Santa Maria, is surrounded by the Talamanca Mountain Range. The coffee industry helps to develop the region socially and economically. In the region of Los Santos there is a seven‐month rainy season (May–‐November) and a dry season (December–‐April). It is during the dry season that the coffee is harvested, which leads to uniform ripening and more consistent drying under the sun.
