Over the last couple of years Colombian coffee producers have been experimenting with infusing coffee with other fruits. We have stocked Jairo Arcila’s coffees before including from his Santa Monica farm. With the cancelling of local markets, Jairo began juicing his mandarins and included some dried mandarins in the natural processing of part of his Castillo crop with terrific results. The coffee was fermented in grain pro bags. The inclusion of citirc acid also aided the natural yeasts on the fruit to do their work effectively keeping clean and vibrant flavours.
This microlot is 100% Castillo from October- December 2021. Castillo was developed by Federacion Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.
