Background: The Expocaccer Cooperative is new to Ministry Grounds, but it presents well if this coffee is anything to go by.
This particular coffee is not Rainforest Alliance certified, but the co-op has some good social/ethical credentials, as you can read here.
Roasting notes: The overall roasting style at Ministry Grounds is tending towards lighter roasts (even for espresso), so you will need to adjust these notes to suit your preferred profile. I start with relatively modest heat, allowing for the lower altitude of the source. The goal in our system to hit first crack in around 8-9 minutes. But moderate the heat to avoid hitting first with too much energy in the beans. From the start of first crack we coast on a gentle upward temp profile for 3-4 minutes before stopping at about a minute before second crack gets a look in.
