Roasting notes: The overall roasting style at Ministry Grounds is tending towards lighter roasts (even for espresso), so you will need to adjust these notes to suit your preferred profile. I start with relatively modest heat, allowing for the lower altitude of the source. The goal in our system to hit first crack in around 8-9 minutes. But moderate the heat to avoid hitting first with too much energy in the beans. From the start of first crack we coast on a gentle upward temp profile for 3-4 minutes before stopping at about a minute before second crack gets a look in.
