The ‘Mountain Water Process Decaffeination’ is a natural process where clear water from the glaciers of Pico Orizaba in Mexico is used to extract the caffeine. The beans are immersed in the water where the coffee oils and the caffeine float in a solution. Then the solution is filtered to remove the caffeine and the water which contains the coffee oils and elements of flavor so that, during the extraction of the caffeine, the beans maintain their original components. The coffee beans obtained are 99.9% caffeine free.

I ordered this variety some time ago and had a mixed experience… But this time, the Chiapas decaf has been the best I’ve tried. A much fuller bodied flavour than I expected. I don’t have my usual roasting setup so I ended up with a lower than usual roasting temp which I kept constant through the first crack and I stopped just as the second crack began.
I’m not sure if it’s a different batch / season but the taste profile is greatly improved and to my un-trained eye, the bean size is more consistent than previously.
… A happy man… I’m back to my afternoon (placebo/decaf) coffee!!
