Soils in Antigua area are volcanic, rich in minerals that are ideal for the three varietals grown. The mill in Pastores is owned by Waelti Schoenfeld uses what locals call a ‘Gourmet’ preparation; taking in only red cherry and grading to 15+ screen size. Which gives local farmers who grow quality cherries confidence in how their produce will be treated.
