RUBY BLEND is achieved by blending washed processed coffee cherries of 4 different farms. 2 of them are located at
the Cerro Verde Volcano and the other 2 at Ilamatepec Volcano. These 4 farms are all SHG farms. They produce exceptional quality coffees. Coffee Cherries are carefully picked at the farm. Any underripe, dry or green cherries are
removed from the batch. The coffee cherries are transported to our mill Vivagua to dry.
These layers of coffee are moved 5-8 times each day, every day. At night, the coffee is piled up into small batches and
covered with yute bags to protect it from dew or unexpected rains.
The humidity of the coffee is measured every day. Once it reaches 12%, the coffee is packed into yute bags and stored
in the warehouse in a spot that is previously assigned in order to preserve traceability.
The time it takes for the parchment coffee to reach the desired humidity can be 8-10 days.
RUBY BLEND is a product that allows coffee farms be sustainable. This is great quality coffee that is traceable,
well processed and because it is a natural, it requires less water for processing. This product provides jobs for more
that 100 people. This means that it has an important social impact in the coffee lands of El Salvador. Additionally, Ruby blend is eco-friendly because it is grown under shade, and the farms where this coffee is grown capture water and produce the oxygen that we breathe.
