This coffee is an example of farmers being willing to experiment with their coffee processes. This coffee has undergone double fermentation. The coffee cherries are soaked in cold water before being pulped, fermented and washed.
Capricórnio Coffees is named after the tropic of capricorn which runs through the state of Paranà, the farm Fazenda California is located at the top of the state, in Jacerezinho close to the Sao Paulo state boarder. Taken over by Luiz Roberto Saldanha Rodrigues in 2004, the farm had a traditional practice, dating back to early 19th century, with some inefficiencies considering the climate. Luiz brought the farm up to the specialty standard, with reform to the land, varietals and processes.
