Popayan’s farmers have made the switch of primarily working with crops that yield large quantities to solely dealing with micro-lots that require more care and dedication. This change has allowed the farmers to focus on nurturing the coffee and emphasize quality versus quantity.
The coffee is produced under shade grown canopy and fully sun dried.
Colombia has a diverse group of growing regions spread from North to South along the three “cordilleras,” the mountain ranges that are the Northern extensions of the Andes. Most of the Colombian coffee; especially from the Southern growing areas of Popayan comes from small family farms.
Popayan has a rich coffee producing history but only recently became one of the most sought after coffee growing regions in the world.
