In the cup: Vanilla and chocolate aroma. Cane syrup and ripe orchard fruits. Soft juicy acidity, smooth body. Vanilla and stone fruit aftertaste. Jasmine notes as the coffee cools.
This coffee is a slightly different take on the washed process. Cherries picked by a strict ripeness criteria were fermented for 25 hours inside grain pro bags then pulped and fermentation was continued with the fruit together without water for 24 hours. The coffee was then washed and placed on raised beds to reach its ideal moisture content. This version of washed coffee uses up to 90% less water than the usual washed coffee process.
Martin is part of the leaders of the indigenous community Nasa Wes’x. The Nasa Wesx people live in different indigenous territories in Cauca, Huila and Tolima. Martin a member of the Ascisp Specialty Coffee Association.
