This varietal is grown by Omar Guzman at Finca Las Delicias. This microlot is 100% Tabi. This is a new variety developed by Federacion Nacional de Cafeteros. It is a cross between Timor hybrid, Bourbon and Typica. The word Tabi means ‘good’ in the Guambiano Dialect.
The coffee is harvested following a strict ripeness criteria then floated and hand sorted to remove any defects. Cherries are exposed to a short wet fermentation before being depulped. Parchment is later gently washed away. The coffee is then dried under temperature controlled conditions until it reaches 10.5% moisture content to ensure coffee has a longer shelf life.
