Background: Most of the better quality Brazil coffees comes from the Sul de Minas, Mogiana & Cerrado regions, but more specifically, from micro-climates or specific Fazendas within those regions. The Cerrado region is a savannah-like area, dry and flat that spans across many states in Central Brazil covering some 2 million hectares of land and accounting for more than half of Brazil’s agricultural output and some estimates suggest 60% of coffee output.

Moreninha Formosa comes from Fazenda Aurea. The region of Alto Paranaíba is the highest part of Cerrado Mineiro. After being involved in the Brazilian coffee market for more than 25 years, João Antônio Lian and Luis Antônio Moraes Ribeiro decided to invest in coffee production about 10 years ago.

At 1250 meters above sea level Alto Paranaíba has rich soil, very consistent rain fall and superb weather condiVons for producing great coffee. Harvest takes place from around May to September.
The farm has more than 50,000 square meters of patios for drying and processing natural coffees. The suspended patios ensure that the coffee dries slower and more evenly. The farm it self produces around 50,000 bags per year per year.

Ace of base

This is an excellent base for an espresso blend, particularly in milk based drinks. I have made some of the most exquisite flat whites I've ever tasted using a blend of 50% of this with 25% Mexican Atoyac (Natural) and 25% of a good quality wet hulled Sumatran. I roasted it in my Behmor using the P4 program and stopped it a minute or so after the end of the first crack and just shy of the second crack. I'm guessing that it is a forgiving bean and will be fine for espresso any where between the end of the first crack and a rolling second crack.
